Basically everything except the kitchen sink.
You'll need:
5 Italian sausage links (sweet, hot or mixed)
1 lb chicken breast
1 thick cut pork chop, cooked and sliced thin (this was my leftover dinner from the other night - lol. I didn't want it to go to waste)
2 peppers (we used green)
2 medium yellow onions, sliced in rounds
4 tbsp fresh basil pesto (we had to get rid of it. You can omit this if you don't have/don't like pesto)
2 cups Trader Giotto's basil marinara sauce
3 tbsp olive oil
In the biggest pan you have, heat the olive oil. Add sausage and cover. Cook for about 30 minutes, turning every 5 minutes or so.
Remove sausage from the pan and discard 3/4 of the oil.
Add the sliced peppers, onions, chicken, pesto and sauce to the pan. Mix, cover and cook on medium for about 20 minutes.
Add the sliced sausage and pork, mix well and cook for another 5 minutes.
This will easily serve 6-8 people or 2-3 people with plenty of leftovers! Serve over Skinny brand jasmine rice, brown rice, a challah roll or carb free. Approximate cost = $15.
